Brown Sugar Jammy Fig Cake

Mamas, you’re going to want to take a look around and see if anybody’s making this in your vicinity, because if they are, you’re likely to get slapped.

It’s been a while since I posted a recipe. But recreational cooking and baking are occasionally-indulged hobbies, and after a day spent in front of the computer screen, it was time to play in the kitchen a bit. Kitchen playtime always starts with a quick survey of the pantry and fridge, and that is how Brown Sugar Jammy Fig Cake came about.

1/2 cup of butter, melted

1/2 cups light brown sugar

1 tsp vanilla

1 egg

8 oz jar of fig preserves

1.5 cups flour

1 tbsp baking powder

1/2 cup of half-and-half or milk

Once the butter has cooled a bit, combine the first four ingredients and stir. Stir in the preserves, mixing well. Add the dry ingredients and combine well; then bit by bit, the half-and-half. The batter will be on the thick side, not runny.

Spray a glass bread pan well with vegetable oil and fill halfway full with batter . Bake at 350F for about an hour, until a toothpick inserted into the middle comes out clean, your house smells divine, and your loved ones are sniffing the air and asking, “Is it ready yet?”

Eat hot with good quality butter and if there’s anything left over, slice thin, toast, and devour with mascarpone or cream cheese for a decadent breakfast.

Oh, and tell your mama you’re sorry about slapping her. You just couldn’t help yourself.
